  3. In large stock pot, brown sausage over medium heat. Remove from pot when done and set aside. Leave sausage grease in pot.
  4. Add butter, onions, carrot, celery and a pinch of salt/pepper to sausage grease and saute until onions begin to turn clear (about 7-8 min).
  5. Add garlic and flour and saute until flour turns light golden brown (about 3 min).

  8. Return heat to medium high and heat to a medium boil stirring occasionally. Add potatoes and return to boil.
  9. Simmer, stirring occasionally, until potatoes are just fork tender (20-25 min).
  10. Add sausage back to soup and simmer another 5 minutes or so.
  11. Remove from heat and stir in spinach to wilt in hot broth. Adjust salt and pepper to taste.
  12. Serve with desired condiments (shredded cheese, chopped parsley, etc.).
