Once cooled enough to the touch, peel skin with a Peeler. Slice off both ends, and now cut down the middle lengthwise. Scoop out seeds with a spoon, and save them for later roasting, if desired. Dice Squash into 1" Cubes.
  3. Pour Squash on a baking sheet or into a casserole dish. Pour over the rest of the ingredients and mix well. Make sure Squash is in a single, even layer and then put into the oven. Roast for 40 - 50 minutes, or until soft and as caramelized as desired. I like to stir the Squash about half way through cooking.
