- Make sure all items are prepared before you start cooking. Chop pecans. Sift cocoa and powdered sugar together. Measure out vanilla; set aside. Butter large baking pan with one inch sides. The bigger the pan the thinner it will be, making it go further.
- Melt butter and cheese together in large stock pot. Stir constantly. I use an immersion blender to combine once all is melted. Be sure to stay with it because it will stick and scorch. (Ask me how I know 😳)
- Once cheese & butter is melted and blended together, slowly add cocoa sugar mixture. Stir constantly. (My Dad used to do this part for Moma.). So I improvised with a handheld mixer.
- Cook over low heat until it reaches 125* on candy thermometer, soft ball stage. Stirring occasionally, to prevent sticking (mixer)
- Remove from heat. Stir in pecans and vanilla. Mix to blend well.
- Pour into prepared pan, spread to edges. Let cool completely on cooling rack. Cut into small one inch squares. Store in airtight container.
