  10. NOTE: soy sauce, shrimp paste and fish sauce are all salty. Adjust amounts to your liking

  1. Heat oil in medium pot, saute onions for a few minutes.
  2. Add garlic and cook for another minute.
  3. Add bitter melon and tomato and soy sauce, mix well. Cook for a few minutes, stirring often.
  4. Add water or stock to almost cover (about 2/3 covered)
  5. Bring to a gentle boil, turn down heat and partially cover.
  6. Simmer until tender (about 15-20 minutes) stirring occasionally.
  7. Add beaten egg and stir well until egg is scrambled.
  8. Add salted shrimp paste or fish sauce if using. Mix well.
  9. Serve with rice! Delicious with fish and rice.
