Steps to make Chorizo Stuffed Potatoes
- Chop the onion and capers. Heat the chorizo add in the onion and capers.

- Break up the chorizo no large chunks you want it a bit loose. Let simmer so the onion is cooked down enough as not to be noticed except in flavour. After simmer time is 20 minutes, add in the honey, sugar, tomato sauce and tomato paste. Cook till no liquids are there. Taste add the salt to your taste. It should tighten and release from the sides and bottom of pot.

- Move the filling to a bowl to cool. Take the dates and chop them up. Add to the pot you took the filling out of.

- Heat the dates through add the water a bit at a time. As the liquids reduce and date meat dissolves it will become like a paste till the reduction is a sauce. In another pot start the mashed potatoes. Make them firm add what you like, as you like to make them.

- Mash the date meat into the liquid if they don't dissolve. I like mine with a liquid sauce and little pieces. When done add to the cooling filling. Stir it in and incorporate well. Put into the refrigerator and chill covered up.

- Ok they have both cooled the potatoes are ok if warmed a bit. The meat needs to be cold at least an hour and a half in the refrigerator.

- If you stick a spoon in the potatoes and it stands up by itself the potatoes are firm enough to make potato balls. Take and handful of potatoes and make a pattie in your hand. Heat oil.

- Put a helping tablespoon or a desertspoonful in the middle of pattie. Close up the sides then push potatoes around the filling. Gently roll in hand till a round ball is formed. Put wax paper on a baking sheet. Coat the balls with all purpose flour.

- Carefully put the potato balls into the oil and fry. Turn as needed. Fry each side 3-1/2 minutes per side or till slightly brown. Then turn and fry each side 2 minutes each. Then move to paper towels to absorb excessive amounts of oil.

- Repeat till done allow last batch to rest 7 minutes and serve. I hope you enjoy!!!
