- pad thai sauce
- 2 Tbsp Tamarind Pulp
- 1/2 Cup Boiling Water
- 3 Tbsp Sugar
- 2 Tbsp Fish Sauce
- 1 Tbsp Soy Sauce
- for pad thai
- 2 Chicken Breasts (chopped)
- 2 Cups Thai Noodles (I use Thai Vermicelli Noodles)
- 4 Tsp Sweet Thai Soy Sauce (Halved)
- 1 Tsp Corn Starch
- Kosher Salt to Taste
- 1 Tsp Black Pepper
- 4 Garlic Cloves (minced)
- 1 Small Red Onion (Thinly Sliced)
- 3 Eggs
- 1 Cup Bean Sprouts
- 1 Cup Green Onion (Sliced)
- 4 Tbsp Roasted Peanuts
- 1 Wedge of Lime Juice per plate
- Cooking Oil for Wok
- Red Pepper Flakes (optional for heat)
Instructions to make Chicken Pad Thai
- First we make the sauce. Boil 1/2 cup of water and place your Tamarind pulp into a medium sized bowl. Pour water into bowl and whisk until the Pulp turns into a paste.

- Once done, push the paste through a mesh screen and you'll be left with your paste. Next add your sugar, fish sauce and soy sauce. Mix well and refrigerate until you're ready to use it.



- Slice your chicken breast into smaller and equal sized pieces. Place them in a bowl and mix them with a large pinch of Kosher salt, then the black pepper, corn starch and sweet soy sauce. Mix thoroughly and be sure the chicken is fully coated on all sides.


- Next, precut all your vegetables, crush the peanuts and Pre-Measure your cornmeal.

- Now, cook your noodles by placing them in a large bowl and submerging them in hot water (not boiling). Let them soak for 10-15 minutes or until they are aldente. Drain the water when they're done.

- Heat your wok over medium-high heat, then coat with cooking oil. Add your chicken and stir until cook. Allow the chicken to brown a bit on each side, then remove into a bowl. Make sure to pour all the juices into the bowl as well.



- Add more oil to your wok and allow it to heat well. Add your thinly sliced onion and cook until they soften. Once soften, add your garlic and cook for 2 minutes.

- Add your cooked noodles, then Pad Thai sauce to the wok. Mix until the noodles are fully coated. Push the heat to high and cook while constantly stirring (1-2 minutes). Lower heat and continue to cook and stir for another minute.

- Crack and place your eggs into a bowl. Whisk eggs until fully blended and bring over to your wok.

- Move the noodles to the side and add your egg. Allow it to cook through, then mix with the noodles.

- Next add your green onion, cooked chicken and sprouts. Mix well and stir fry until the green onion begin to slightly wilt.


- Remove from heat and place into bowls to serve. If you like some heat, mix in some red pepper flakes now and stir together. Otherwise, add your peanuts, and additional sprouts. Serve immediately.
